5-Ingredient Mediterranean Frittata
Fluffy, protein-packed, and bursting with Mediterranean flavors—ready in 20 minutes!
🥘 Ingredients (Serves 4)
- 6 large eggs
- ½ cup (75g) crumbled feta cheese
- 1 cup (150g) cherry tomatoes, halved
- 1 cup (30g) fresh spinach, roughly chopped
- 2 tbsp (30ml) olive oil
- Optional: Salt, pepper, dried oregano, or kalamata olives
🍳 Instructions
1️⃣ Whisk eggs in a bowl; season lightly (feta is salty!).
2️⃣ Sauté veggies: Heat oil in a 10-inch oven-safe skillet. Cook tomatoes and spinach for 2 mins until softened.
3️⃣ Add eggs & feta: Pour eggs over veggies. Sprinkle feta on top.
4️⃣ Cook & finish:
- Stovetop: Cook on medium-low for 5 mins until edges set.
- Broiler: Transfer to oven and broil for 2-3 mins until golden.
💡 Tips
✔ No oven? Cover and cook on low until eggs set (~8 mins).
✔ Add-ons: Toss in olives, red onion, or fresh herbs.
