🍍 Air Fryer Pineapple Chicken

Serves: 3–4 | Prep Time: 15 min | Cook Time: 15 min

Ingredients:

  • ¼ cup BBQ sauce

  • ¼ cup teriyaki sauce

  • 4 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 lb boneless, skinless chicken breasts, cubed

  • 2 cups fresh pineapple chunks

  • 1 red bell pepper, cut into 1-inch chunks


Instructions:

  1. Marinate the Chicken:

    • In a bowl, mix BBQ sauce, teriyaki sauce, garlic, and ginger.

    • Add cubed chicken and stir to coat evenly.

    • Let marinate for at least 15–30 minutes (or up to 2 hours for more flavor).

  2. Preheat Air Fryer:

    • Preheat to 375°F (190°C) for about 3–5 minutes.

  3. Prepare for Air Frying:

    • Toss pineapple chunks and red bell pepper with the marinated chicken.

    • Spray air fryer basket with oil or use parchment liner for easier cleanup.

  4. Air Fry:

    • Add the mixture to the basket in a single layer.

    • Cook at 375°F (190°C) for 12–15 minutes, shaking halfway through, until chicken is cooked through (internal temp should be 165°F/74°C) and slightly caramelized.

  5. Serve:

    • Serve over rice, noodles, or in lettuce wraps.

    • Garnish with chopped green onions or sesame seeds, if desired.


✅ Tips:

  • Want it spicier? Add a pinch of chili flakes or a splash of sriracha to the marinade.

  • For extra caramelization, brush a little more BBQ sauce during the last 2 minutes of cooking.

  • This works well with chicken thighs too—just increase cook time by a couple minutes.
