Crispy Air Fryer Zucchini with Parmesan

Golden, crunchy zucchini coins with a savory Parmesan crust—ready in under 15 minutes!

A healthy, low-carb snack or side that’s perfectly crispy without deep-frying.


Ingredients

  • 2 medium zucchinis, sliced into ¼-inch rounds

  • 2 tbsp olive oil (or avocado oil)

  • ½ cup grated Parmesan cheese (fresh or pre-shredded)

  • ¼ cup breadcrumbs (panko for extra crunch, or almond flour for keto)

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • ½ tsp paprika (optional, for smokiness)

  • Salt & black pepper, to taste

  • Cooking spray (optional, for extra crispness)


Instructions

1️⃣ Prep the Zucchini

  1. Slice zucchini into even ¼-inch rounds. Blot dry with paper towels (this helps them crisp up!).

  2. In a bowl, toss zucchini with olive oil, salt, and pepper.

2️⃣ Coat with Parmesan Mixture

  1. In a separate bowl, mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, and paprika.

  2. Dredge each zucchini round in the mixture, pressing gently to adhere.

3️⃣ Air Fry to Crispy Perfection

  1. Preheat air fryer to 400°F (200°C) for 3 minutes.

  2. Arrange zucchini in a single layer in the basket (work in batches if needed). Lightly spray with oil.

  3. Air fry for 8–10 minutes, flipping halfway, until golden and crispy.

4️⃣ Serve & Enjoy!

  • Sprinkle with extra Parmesan and fresh chopped parsley.

  • Serve with marinara sauce, ranch, or tzatziki for dipping.


Tips for Success

🌿 Herb twist: Add 1 tbsp chopped fresh basil or oregano to the coating.
🔥 Extra crispy? Spritz zucchini lightly with oil before air frying.
🧀 Cheesy upgrade: Add a sprinkle of mozzarella in the last 2 minutes of cooking.
