Instructions
1️⃣ Prep the Zucchini

Slice zucchini into even ¼-inch rounds. Blot dry with paper towels (this helps them crisp up!).

In a bowl, toss zucchini with olive oil, salt, and pepper.

In a separate bowl, mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, and paprika.

Dredge each zucchini round in the mixture, pressing gently to adhere.
