Amish Applesauce Cake

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup applesauce
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • ½ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 1/2 cup raisins or chopped walnuts (optional)

Instructions:

1. Preheat and Prepare the Pan:

  • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or a 9×9-inch square pan.

2. Mix the Dry Ingredients:

  • In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and nutmeg. Set aside.

3. Combine Wet Ingredients:

  • In a large bowl, beat together the applesauce, granulated sugar, brown sugar, eggs, vegetable oil (or melted butter), and vanilla extract until smooth and well combined.

4. Add the Dry Ingredients:

  • Gradually add the dry ingredients to the wet ingredients, mixing until fully combined. Be careful not to overmix.

5. Optional Add-ins:

  • If using, fold in the raisins or chopped walnuts.

6. Bake the Cake:

  • Pour the batter into the prepared cake pan and spread it evenly.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

7. Cool and Serve:

  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Once cooled, you can serve the cake as-is, or dust it with powdered sugar or top it with a simple glaze or frosting if desired.

Tips:

  • Moistness: The applesauce adds a lot of moisture to the cake, keeping it tender and flavorful. If you prefer a more spiced cake, feel free to adjust the cinnamon and nutmeg to taste.
  • Storage: Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days.
