Ingredients:

  • 4 cups fresh fruit (strawberries, raspberries, or a combination of your favorite fruits)
  • 2 cups granulated sugar
  • 1/4 cup lemon juice (freshly squeezed)
  • 1/2 teaspoon butter (optional, to reduce foaming)
  • 1 box (1.75 oz) fruit pectin (such as Sure-Jell)

Instructions:

1. Prepare the Fruit:

  • Wash and hull your fruit (remove stems, pits, or seeds as needed).
  • If using larger fruits like strawberries, chop them into smaller pieces to help release more juice.
  • Mash the fruit with a potato masher or blend it in a food processor, depending on your desired jam texture (chunky or smooth).

2. Cook the Jam:

  • In a large, heavy-bottomed pot, combine the mashed fruit, lemon juice, and sugar.
  • Stir the mixture over medium heat until the sugar dissolves completely.
  • Bring it to a boil, then reduce heat slightly and let it simmer for about 10-15 minutes, stirring often. If using butter, add it now to help reduce foam.

3. Add the Pectin:

  • Sprinkle the pectin evenly into the fruit mixture, stirring constantly to avoid clumping.
  • Bring the mixture back to a boil for 1-2 minutes while stirring. The jam should start to thicken.

4. Test the Jam:

  • To check if your jam is set, place a small spoonful on a chilled plate and let it sit for a minute. Run your finger through the jam—it should wrinkle slightly and not run. If it’s too thin, cook for a few more minutes and test again.

5. Can or Cool:

  • If you want to store the jam for a longer period, sterilize your jars by boiling them for 10 minutes, and pour the hot jam into the jars, leaving about 1/4 inch at the top. Seal with sterilized lids.
  • For a quicker version, just allow the jam to cool to room temperature, then store it in jars or containers in the fridge. It will keep for about 2-3 weeks.

6. Enjoy:

  • Once cooled or sealed, enjoy your homemade Amish Jam on bread, pancakes, or use it in recipes that call for fruit preserves!

Tips:

  • No Pectin?: If you don’t have pectin, you can make the jam without it. Just cook the fruit and sugar mixture longer to thicken naturally. It may take an extra 15-20 minutes of simmering.
  • Fruit variations: You can use almost any type of fruit you prefer, such as blueberries, peaches, or mixed berries.
  • Sweetness: Adjust the sugar amount based on the sweetness of the fruit you’re using. Some fruits, like strawberries, are naturally sweeter, so you might want to reduce the sugar a bit.

This Amish Jam is simple, flavorful, and perfect for giving your breakfast or dessert a homemade touch!
