Instructions:

  1. Prepare the Potatoes:
    • Peel and grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step is crucial for achieving crispy pancakes.
  2. Mix the Batter:
    • In a large bowl, combine the grated potatoes, grated onion, beaten eggs, flour, salt, pepper, and baking powder (if using). Mix well until everything is evenly combined.
  3. Heat the Oil:
    • Heat 1-2 tablespoons of vegetable oil or butter in a large skillet over medium heat.
  4. Form and Fry the Pancakes:
    • Scoop about 1/4 cup of the potato mixture for each pancake and flatten it into a patty shape. Carefully place the patties into the hot skillet, leaving space between them.
    • Cook for 3-4 minutes on each side, or until golden brown and crispy. Add more oil to the skillet as needed between batches.
  5. Drain and Serve:
    • Transfer the cooked pancakes to a plate lined with paper towels to drain any excess oil.

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or oven to restore crispiness.
