Amish Snow Day Soup

Ingredients:

  • 4 cups fresh or frozen corn kernels
  • 1 medium onion, diced
  • 2 medium potatoes, peeled and diced
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 4 slices of turkey bacon, cooked and crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon butter (optional)
  • Salt and pepper, to taste
  • Fresh parsley or chives for garnish (optional)

Instructions:

1. Sauté the Vegetables:

  • In a large pot, melt the butter over medium heat. Add the diced onion and cook for 4-5 minutes until softened.
  • Add the minced garlic and cook for another 1 minute, stirring constantly to avoid burning.

2. Add the Potatoes and Broth:

  • Add the diced potatoes to the pot and stir to combine.
  • Pour in the chicken or vegetable broth, then bring the soup to a boil. Reduce the heat and let it simmer for about 10-15 minutes, or until the potatoes are tender.

3. Add the Corn:

  • Stir in the fresh or frozen corn kernels and continue to simmer for another 5-7 minutes, until the corn is heated through.

4. Add the Cream and Turkey Bacon:

  • Pour in the heavy cream and stir to combine. Let the soup simmer for a few more minutes to heat the cream through and blend the flavors.
  • Stir in the crumbled turkey bacon, and season with salt and pepper to taste.

5. Serve:

  • Ladle the soup into bowls and garnish with fresh parsley or chives if desired.
  • Serve with crusty bread or crackers for an extra cozy meal.

Tips:

  • For Extra Flavor: You can add a pinch of cayenne pepper or smoked paprika for a little kick and smoky flavor.
