Here’s a delicious Asian Chicken Cranberry Salad recipe that combines sweet, savory, and tangy flavors with a crunchy texture. Perfect for a light lunch or dinner!

Ingredients:

For the Salad:

  • 2 cups cooked chicken breast, shredded or diced

  • 4 cups mixed greens (romaine, spinach, or cabbage)

  • ½ cup dried cranberries

  • ½ cup sliced almonds or cashews (toasted for extra crunch)

  • ½ cup mandarin oranges (canned or fresh)

  • ½ cup shredded carrots

  • ¼ cup chopped green onions

  • ¼ cup fresh cilantro (optional)

For the Dressing:

  • 3 tbsp soy sauce (or tamari for gluten-free)

  • 2 tbsp honey (or maple syrup for vegan)

  • 1 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 1 tsp grated ginger

  • 1 clove garlic, minced

  • ½ tsp red pepper flakes (optional for heat)

Instructions:

  1. Prepare the Dressing:

    • In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes. Set aside.

  2. Assemble the Salad:

    • In a large bowl, combine mixed greens, shredded chicken, cranberries, almonds, mandarin oranges, carrots, green onions, and cilantro.

  3. Toss & Serve:

    • Drizzle the dressing over the salad and toss gently to coat.

    • Serve immediately for the best texture.
