Asparagus Casserole

Ingredients

  • 2 lbs (900g) fresh asparagus, trimmed and cut into 2-inch pieces
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 1 1/2 cups (360ml) milk
  • 1/2 cup (120ml) heavy cream
  • 1 cup (120g) shredded cheddar cheese
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup (100g) breadcrumbs (or crushed crackers)
  • 2 tbsp melted butter (for topping)
  • 1/4 cup (25g) grated Parmesan cheese (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook the asparagus:
    • Bring a large pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes, or until bright green and tender-crisp. Drain and set aside.
  3. Make the sauce:
    • In a medium saucepan, melt 3 tbsp butter over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux.
    • Gradually whisk in the milk and heavy cream, stirring constantly until the mixture thickens (about 5 minutes).
    • Stir in the cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and black pepper until the cheese is melted and the sauce is smooth.
  4. Assemble the casserole:
    • Spread the cooked asparagus evenly in the prepared baking dish. Pour the cheese sauce over the asparagus.
  5. Prepare the topping:
    • In a small bowl, mix the breadcrumbs, melted butter, and Parmesan cheese. Sprinkle the mixture evenly over the casserole.
  6. Bake:
    • Bake for 20-25 minutes, or until the topping is golden brown and the casserole is bubbly.
  7. Serve:
    • Let the casserole cool for 5 minutes before serving. Enjoy warm!

  • Add protein: Mix in cooked chicken, ham, or bacon for a heartier dish.
