Avocado Egg Rolls with Creamy Cilantro Ranch Dip

Crispy, creamy, and packed with fresh flavors—just like the famous restaurant version!

Ingredients

For the Egg Rolls:

  • 2 large ripe avocados, diced
  • 1/4 cup sun-dried tomatoes, chopped (oil-packed, drained)
  • 2 tbsp red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cumin (optional)
  • 8–10 egg roll wrappers
  • Oil for frying (or baking instructions below)

For the Cilantro Ranch Dip:

  • 1/2 cup sour cream (or Greek yogurt)
  • 1/4 cup mayonnaise
  • 2 tbsp buttermilk (or milk)
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ranch seasoning mix (or 1/2 tsp each dried dill, garlic powder, onion powder)
  • 1 tbsp lime juice
  • Salt & pepper to taste

Instructions

1. Prepare the Filling

  1. In a bowl, gently mix avocados, sun-dried tomatoes, red onion, cilantro, lime juice, salt, pepper, and cumin.

2. Assemble the Egg Rolls

  1. Place an egg roll wrapper diagonally on a clean surface.
  2. Spoon 2–3 tbsp of filling onto the center.
  3. Fold the bottom corner over the filling, then fold in the sides. Roll tightly, sealing the edge with a dab of water.

3. Cook

  • Frying: Heat 1–2 inches of oil to 350°F (175°C). Fry rolls for 2–3 mins per side until golden. Drain on paper towels.
  • Baking: Brush rolls with oil and bake at 400°F (200°C) for 15–20 mins, flipping halfway.

4. Make the Dip

  • Whisk all dip ingredients until smooth. Chill until serving.

5. Serve

  • Slice egg rolls diagonally and serve warm with the cilantro ranch dip.
