Bacon Cheeseburger Meatloaf

Ingredients:

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup bread crumbs
  • 1/2 cup milk
  • 1/2 cup ketchup
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 8 slices bacon
  • 1/4 cup barbecue sauce (optional, for glazing)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Prepare Meatloaf Mixture: In a large mixing bowl, combine the ground beef, ground pork, bread crumbs, milk, ketchup, eggs, chopped onion, minced garlic, Worcestershire sauce, salt, and black pepper. Mix until well combined.
  3. Add Cheese: Gently fold in the shredded cheddar cheese until evenly distributed throughout the mixture.
  4. Form Meatloaf: Transfer the meat mixture to the prepared baking sheet or loaf pan, shaping it into a loaf.
  5. Wrap with Bacon: Lay the bacon slices over the top of the meatloaf, tucking the ends underneath to secure. If desired, brush the bacon with barbecue sauce for added flavor.
  6. Bake: Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C) and the bacon is crispy.
  7. Rest and Serve: Allow the meatloaf to rest for 10 minutes before slicing and serving.
