🌴 Bahama Mama Cinnamon Rolls

A tropical twist on classic cinnamon rolls with coconut, pineapple, and a rum glaze that’ll transport you to the islands!

📝 Dough Ingredients

  • 3¼ cups all-purpose flour (+ extra for dusting)

  • 2¼ tsp instant yeast (1 packet)

  • ¼ cup granulated sugar

  • ½ tsp salt

  • ¾ cup warm milk (110°F)

  • ¼ cup melted butter

  • 1 large egg, room temperature

🍍 Filling Ingredients

  • ⅓ cup softened butter

  • ½ cup brown sugar

  • 1 tbsp cinnamon

  • ½ cup crushed pineapple, well drained

  • ½ cup sweetened shredded coconut

  • ¼ cup chopped macadamia nuts (optional)

🥃 Rum Glaze Ingredients

  • 1½ cups powdered sugar

  • 2 tbsp melted butter

  • 2 tbsp milk or pineapple juice

  • 1 tbsp rum (or 1 tsp rum extract)

  • ½ tsp vanilla extract


👩‍🍳 Instructions

1. Make the Dough:

  1. In a large bowl, whisk together flour, yeast, sugar and salt.

  2. Add warm milk, melted butter and egg. Mix until a shaggy dough forms.

  3. Knead for 5-7 minutes until smooth and elastic. Place in greased bowl, cover and let rise 1 hour until doubled.

2. Prepare Filling:
While dough rises, mix brown sugar and cinnamon in small bowl. Drain pineapple well and pat dry.

3. Assemble Rolls:

  1. Roll dough into 12×18-inch rectangle on floured surface.

  2. Spread with softened butter, then sprinkle evenly with:

    • Cinnamon sugar mixture

    • Crushed pineapple

    • Shredded coconut

    • Macadamia nuts (if using)

  3. Roll up tightly from long side and pinch seam to seal.

  4. Cut into 12 even slices using dental floss or sharp knife.

4. Second Rise & Bake:

  1. Place rolls in greased 9×13 pan. Cover and let rise 30 minutes.

  2. Bake at 350°F for 22-25 minutes until golden brown.

5. Make Glaze & Serve:

  1. Whisk together all glaze ingredients until smooth.

  2. Drizzle over warm rolls.

  3. Garnish with extra coconut and pineapple bits if desired.

🍹 Pro Tips:

  • For non-alcoholic version: Use rum extract or substitute with orange juice

  • Toast coconut first for extra flavor

  • Best served warm – reheat for 10 seconds before serving leftovers
