Baked Apple Fritters

Ingredients:

For the Fritters:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups apples, peeled and diced (about 2 medium apples)
  • 1/2 cup chopped walnuts or pecans (optional)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk (or more for desired consistency)
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and sugar.
  3. Combine Wet Ingredients:
    • In a separate bowl, mix the milk, applesauce, egg, and vanilla extract until well combined.
  4. Combine Mixtures:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apples and nuts (if using).
  5. Shape the Fritters:
    • Using a spoon or cookie scoop, drop rounded tablespoons of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake:
    • Bake for 15-20 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
  7. Prepare the Glaze:
    • While the fritters are baking, mix the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust the milk for desired consistency.
  8. Glaze the Fritters:
    • Once the fritters are done baking, let them cool for a few minutes before drizzling the glaze over the top.
  9. Serve:
    • Enjoy your warm baked apple fritters!

Tips:

  • Storage: Store any leftovers in an airtight container at room temperature for up to 2 days.
  • Additions: Feel free to add raisins or cranberries for extra flavor!
