Baked Chicken and Biscuits

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs for extra juiciness)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup chicken broth (or water)

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup milk (or buttermilk for extra richness)
  • 1 tablespoon fresh parsley (optional, for garnish)

For the Chicken Gravy:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Instructions:

1. Prepare the Chicken:

  • Preheat your oven to 375°F (190°C).
  • Rub the chicken breasts with olive oil and season with garlic powder, onion powder, paprika, salt, and pepper.
  • Heat a large skillet over medium-high heat. Sear the chicken breasts for about 2-3 minutes per side until golden brown.
  • Transfer the seared chicken to a baking dish and pour the chicken broth around the chicken. Cover the dish with foil or a lid and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).

2. Make the Biscuits:

  • In a mixing bowl, combine the flour, baking powder, salt, and garlic powder (if using).
  • Cut in the cold butter using a pastry cutter, fork, or your hands until the mixture resembles coarse crumbs.
  • Add the milk and stir until the dough just comes together. Don’t overmix.
  • Turn the dough onto a lightly floured surface and gently knead it a couple of times to bring it together. Roll it out to about 1/2-inch thick and cut into rounds with a biscuit cutter or the rim of a glass.

3. Make the Gravy (Optional):

  • In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1-2 minutes, creating a roux.
  • Gradually whisk in the milk and chicken broth. Stir constantly until the gravy thickens (about 5 minutes). Season with salt and pepper to taste.

4. Assemble and Bake:

  • Once the chicken is done baking, remove the foil and place the biscuit dough rounds on top of the chicken in the baking dish.
  • Return the dish to the oven (uncovered) and bake for 12-15 minutes, or until the biscuits are golden brown on top.

5. Serve:

  • When the biscuits are golden, remove from the oven and let it cool for a few minutes.
  • Serve the baked chicken and biscuits hot, spooning some of the gravy over the chicken and biscuits. Garnish with fresh parsley if desired.

Tips:

  • Chicken Thighs: For even juicier chicken, use boneless, skinless thighs instead of breasts.
  • Make Ahead: You can prepare the biscuits and chicken ahead of time and just bake everything together when you’re ready.
  • Gravy: If you like a thicker gravy, you can cook it longer, or if you prefer a thinner one, add more milk or broth.
