Ingredients

- 500g (1 lb) ground chicken (or turkey)
- 1 small onion, finely diced
- 1 garlic clove, minced
- ½ cup breadcrumbs (or almond flour for low-carb)
- 1 egg, lightly beaten
- 1 tbsp Worcestershire sauce (or soy sauce)
- 1 tsp Dijon mustard
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped
- 1 tbsp olive oil (for brushing)

Instructions
1. Prep the Mixture
- Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
- In a large bowl, combine ground chicken, onion, garlic, breadcrumbs, egg, Worcestershire sauce, mustard, paprika, oregano, salt, pepper, and parsley. Mix gently (don’t overwork, or rissoles will be dense).
2. Shape & Bake
- Scoop ¼ cup portions and shape into flat patties (~2cm thick).
- Place on the tray, brush lightly with olive oil (helps crispiness!).
- Bake for 20-25 mins, flipping halfway, until golden and cooked through (internal temp: 75°C / 165°F).
