Baked Chicken Rissoles

Juicy, flavorful, and healthier than fried! These baked chicken rissoles are packed with herbs, spices, and a secret ingredient for extra tenderness. Perfect for meal prep, kids’ lunches, or a quick weeknight dinner.


Ingredients

(Makes ~12 rissoles)

  • 500g (1 lb) ground chicken (or turkey)
  • 1 small onion, finely diced
  • 1 garlic clove, minced
  • ½ cup breadcrumbs (or almond flour for low-carb)
  • 1 egg, lightly beaten
  • 1 tbsp Worcestershire sauce (or soy sauce)
  • 1 tsp Dijon mustard
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil (for brushing)

(Optional add-ins: grated zucchini, shredded cheese, or diced bell peppers)


Instructions

1. Prep the Mixture

  1. Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a large bowl, combine ground chicken, onion, garlic, breadcrumbs, egg, Worcestershire sauce, mustard, paprika, oregano, salt, pepper, and parsley. Mix gently (don’t overwork, or rissoles will be dense).

2. Shape & Bake

  1. Scoop ¼ cup portions and shape into flat patties (~2cm thick).
  2. Place on the tray, brush lightly with olive oil (helps crispiness!).
  3. Bake for 20-25 mins, flipping halfway, until golden and cooked through (internal temp: 75°C / 165°F).

3. Serve & Enjoy!

  • Great with: Mashed potatoes, salad, or in a burger bun.
  • Dipping sauces: Gravy, sweet chili, or garlic aioli.
