Ingredients:

  • 4 large eggs
  • 1 cup cottage cheese (preferably full-fat or 2% for creaminess)
  • 1/4 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 tbsp fresh herbs (chives, parsley, or thyme), optional
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper, to taste
  • 1 tbsp butter or olive oil (for greasing)
  • Optional toppings: diced tomatoes, spinach, or crumbled bacon

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a small baking dish or individual ramekins with butter or olive oil.
  2. Prepare the Egg Mixture: In a medium bowl, whisk the eggs until well-beaten. Add the cottage cheese, shredded cheese, garlic powder, onion powder, salt, and pepper. Mix well to combine. If you’re using fresh herbs or any other add-ins, stir them in at this stage.
  3. Pour the Mixture into the Dish: Pour the egg and cottage cheese mixture into the prepared baking dish or divide it evenly into individual ramekins.
