Balsamic Braised Short Ribs Recipe

Ingredients

  • 3-4 lbs bone-in beef short ribs
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup balsamic vinegar
  • 1 tbsp brown sugar
  • 2 sprigs fresh rosemary (or 1 tsp dried)
  • 2-3 sprigs fresh thyme (or 1 tsp dried)
  • 2 carrots, chopped
  • 2 celery stalks, chopped

Instructions

  1. Season the Ribs:
    • Pat the short ribs dry with paper towels and season generously with salt and pepper.
  2. Sear the Ribs:
    • In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the short ribs in batches and sear on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.
  3. Sauté Aromatics:
    • In the same pot, add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Deglaze:
    • Pour in the balsamic vinegar, scraping the bottom of the pot to release any browned bits. Let it simmer for 2-3 minutes.
  5. Add Liquid and Herbs:
    • Return the short ribs to the pot. Add the beef broth, brown sugar, rosemary, and thyme. The liquid should cover about two-thirds of the ribs.
  6. Braise:
    • Bring the mixture to a gentle simmer. Cover the pot with a lid and transfer it to a preheated oven at 325°F (160°C). Braise for about 2.5 to 3 hours, or until the ribs are fork-tender.
  7. Serve:
    • Once cooked, remove the pot from the oven and let it rest for a few minutes. Skim off any excess fat from the surface, if desired. Serve the short ribs with the braising liquid and vegetables over mashed potatoes, polenta, or rice.
