Banana Bread Cake with Cream Cheese Frosting

Ingredients

For the Cake:

  • 2-3 ripe bananas, mashed (about 1 cup)
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/2 cup chopped nuts (walnuts or pecans, optional)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp milk (optional, for consistency)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. Mix the Wet Ingredients: In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the mashed bananas and vanilla extract.
  3. Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
  4. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chopped nuts.
  5. Bake: Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool: Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  7. Make the Frosting: In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, mixing until well combined. Stir in the vanilla extract. If the frosting is too thick, add a tablespoon or two of milk to reach your desired consistency.
  8. Frost the Cake: Once the cake is completely cool, spread the cream cheese frosting evenly over the top.

Tips
