Basic Crepe Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk (whole or low-fat)
  • 2 tablespoons melted butter (plus extra for cooking)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional, for sweet crepes)

Instructions:

  1. Make the Batter:
    • In a mixing bowl, whisk together the flour and salt. If making sweet crepes, add the vanilla extract.
    • In another bowl, whisk the eggs and then add the milk and melted butter. Mix until well combined.
    • Gradually add the wet ingredients to the dry ingredients, whisking until you have a smooth batter. Let the batter rest for at least 30 minutes (or up to 2 hours in the refrigerator).
  2. Preheat the Pan:
    • Heat a non-stick skillet or crepe pan over medium heat. Add a small amount of butter to coat the pan.
  3. Cook the Crepes:
    • Pour about 1/4 cup of batter into the center of the hot pan. Quickly tilt and swirl the pan to spread the batter evenly into a thin circle.
    • Cook for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden. Carefully flip the crepe with a spatula and cook for an additional 30 seconds to 1 minute on the other side.
  4. Repeat:
    • Transfer the cooked crepe to a plate and repeat the process with the remaining batter, adding more butter to the pan as needed.
  5. Serve:
    • Fill your crepes with your favorite fillings—sweet options include Nutella, fruit, or whipped cream, while savory fillings can include cheese, ham, or sautéed vegetables.

Tips:

  • Storage: You can stack cooked crepes between layers of parchment paper and store them in the refrigerator for a few days or freeze them for later use.
  • Customization: Feel free to add herbs or spices to the batter for savory crepes or adjust the sweetness for dessert options.
