Basic Loaf Pan Cheesecake Recipe

Ingredients:

For the Crust:

  • 1 cup graham cracker crumbs (about 8-10 graham crackers)
  • 2 tablespoons granulated sugar
  • 3 tablespoons unsalted butter (melted)

For the Cheesecake Filling:

  • 16 oz (2 packages) cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream or Greek yogurt

Optional Toppings:

  • Fresh berries, fruit compote, chocolate sauce, or whipped cream

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 325°F (160°C). Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. Make the Crust:
    • In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
    • Press the mixture firmly into the bottom of the prepared loaf pan. Use the back of a spoon or a measuring cup to compact it evenly.
  3. Prepare the Filling:
    • In a large mixing bowl, beat the cream cheese until smooth and creamy.
    • Add the sugar and mix until well combined.
    • Beat in the eggs, one at a time, followed by the vanilla extract and sour cream (or Greek yogurt). Mix until the filling is smooth and no lumps remain.
  4. Assemble and Bake:
    • Pour the cheesecake filling over the crust in the loaf pan. Smooth the top with a spatula.
    • Tap the pan gently on the counter to remove any air bubbles.
    • Bake in the preheated oven for 35-40 minutes, or until the edges are set but the center still has a slight jiggle.
  5. Cool and Chill:
    • Turn off the oven and crack the door open slightly. Let the cheesecake cool in the oven for 30 minutes to prevent cracking.
    • Remove the cheesecake from the oven and let it cool completely at room temperature. Then, refrigerate for at least 4 hours or overnight to set.
  6. Serve:
    • Use the parchment paper overhang to lift the cheesecake out of the pan. Slice and serve with your favorite toppings, such as fresh berries, fruit compote, or chocolate sauce.

Tips:

  • Crust Variations: Use crushed cookies (like Oreos or digestive biscuits) instead of graham crackers for a different flavor.
  • Flavor Add-Ins: Add lemon zest, cocoa powder, or a swirl of fruit puree to the filling for a unique twist.
  • Storage: Store leftovers in an airtight container in the fridge for up to 5 days.
  • Mini Cheesecakes: Use muffin tins lined with parchment cups to make individual mini cheesecakes. Adjust the baking time to 15-20 minutes.
