Beef & Vegetable Stir-Fry

Ingredients:

  • 500g ground beef (or turkey/chicken for a lighter option)
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 1 cucumber, diced (peeled if desired)
  • 2 tomatoes, diced
  • 1 red onion, chopped
  • 2 green onions, chopped (separate whites & greens)
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp oyster sauce (optional, for umami depth)
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • ½ tsp black pepper
  • 1 tsp sugar (or honey)
  • 1 tbsp vegetable oil (for cooking)
  • Optional garnish: sesame seeds, chili flakes

Instructions:

  1. Prep veggies – Dice all vegetables and set aside.
  2. Cook beef – Heat vegetable oil in a wok/large pan over high heat. Add ground beef and cook until browned (5 mins). Drain excess fat if needed.
  3. Aromatics – Push beef to one side, add garlic, ginger, and white parts of green onions. Sauté 30 sec until fragrant.
  4. Veggies – Add bell peppers, red onion, and cucumber. Stir-fry 2-3 mins until slightly tender but still crisp.
  5. Sauce – Pour in soy sauce, oyster sauce, sesame oil, sugar, and black pepper. Toss everything together.
  6. Finish – Add tomatoes and green onion tops. Stir-fry 1 more minute (tomatoes should stay fresh).
  7. Serve hot over rice, noodles, or lettuce wraps. Garnish with sesame seeds or chili flakes.

🔥 Spice it up? Add 1 tsp sriracha or red pepper flakes!
🍚 Make it a bowl: Serve with steamed rice or cauliflower rice for a low-carb option.
