Beef Liver and Onions Recipe

Ingredients

  • 1 lb beef liver, sliced into 1/2-inch thick pieces
  • 2 large onions, thinly sliced
  • 1/4 cup all-purpose flour (optional, for dredging)
  • 2-3 tablespoons olive oil or butter
  • Salt and pepper, to taste
  • 1 tsp garlic powder (optional)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Prepare the Liver:
    • Rinse the liver slices under cold water and pat them dry with paper towels. If desired, dredge the liver in flour seasoned with salt, pepper, and garlic powder for a slight crust.
  2. Cook the Onions:
    • In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized (about 10-15 minutes). Remove the onions from the skillet and set them aside.
  3. Cook the Liver:
    • In the same skillet, add another tablespoon of olive oil or butter. Increase the heat to medium-high. Add the liver slices and cook for about 3-4 minutes on each side, or until browned and cooked through. (Liver should still be slightly pink inside; avoid overcooking to keep it tender.)
  4. Combine and Serve:
    • Return the caramelized onions to the skillet with the liver, stirring to combine. Cook for an additional minute to heat through. Season with salt and pepper to taste.
  5. Garnish and Serve:
    • Garnish with fresh parsley if desired. Serve hot with mashed potatoes, rice, or crusty bread.
