Beef Nachos Supreme

Ingredients:

  • For the Beef:
    • 1 pound ground beef
    • 1 tablespoon olive oil (if needed)
    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 1 packet taco seasoning (or homemade seasoning)
    • 1/4 cup water
  • For the Nachos:
    • Tortilla chips (about 10-12 ounces)
    • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
    • 1 can (15 oz) black beans, rinsed and drained
    • 1 cup diced tomatoes (fresh or canned)
    • 1/2 cup sliced jalapeños (pickled or fresh)
    • 1/2 cup sour cream
    • 1/4 cup sliced green onions
    • Fresh cilantro (for garnish, optional)

Instructions:

  1. Prepare the Beef:
    • In a skillet over medium heat, add olive oil if needed and sauté the diced onion until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
    • Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
    • Stir in the taco seasoning and water. Cook for another 5 minutes until well combined and heated through. Remove from heat.
  2. Assemble the Nachos:
    • Preheat your oven to 350°F (175°C).
    • On a large baking sheet or oven-safe platter, spread a layer of tortilla chips.
    • Evenly distribute the cooked beef over the chips.
    • Sprinkle the black beans, diced tomatoes, and sliced jalapeños on top.
    • Generously cover with shredded cheese.
  3. Bake:
    • Place the nachos in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
  4. Add Toppings:
    • Remove the nachos from the oven and let them cool slightly. Drizzle with sour cream and sprinkle with sliced green onions and cilantro if desired.
  5. Serve:
    • Serve immediately and enjoy your Beef Nachos Supreme!
