Best Chicken Salad Recipe

Ingredients:

  • 3 cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt (or more mayo, if preferred)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup celery, finely chopped
  • 1/2 cup red grapes, halved (or chopped apples for a crunch)
  • 1/4 cup sliced almonds (or walnuts)
  • 1/4 cup green onions, chopped (or red onion for a stronger flavor)
  • Salt and pepper to taste
  • Optional: fresh herbs (like parsley or dill) for added flavor

Instructions:

  1. Prepare the Chicken:
    • If you’re using leftover chicken or a rotisserie chicken, shred or dice it into bite-sized pieces.
  2. Make the Dressing:
    • In a large bowl, mix together the mayonnaise, Greek yogurt, Dijon mustard, and lemon juice until smooth.
  3. Combine Ingredients:
    • Add the chicken, celery, grapes, almonds, and green onions to the bowl. Gently stir to combine, ensuring everything is coated in the dressing.
  4. Season:
    • Taste and season with salt and pepper as needed. If you’re using fresh herbs, fold them in at this stage.
  5. Chill:
    • Cover the chicken salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve:
    • Serve on bread, in a wrap, or over a bed of greens. You can also enjoy it with crackers or as a dip.
