Biscuits and Gravy with Sausage and Egg Breakfast Casserole

Ingredients:

For the Casserole:

  • 1 can (16 oz) refrigerated biscuits (or homemade biscuits)
  • 1 lb breakfast sausage (bulk or casings removed)
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)

For the Gravy:

  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon sausage seasoning (or a mix of salt, pepper, and a pinch of cayenne)
  • Salt and pepper to taste

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

2. Cook the Sausage:

  • In a skillet over medium heat, cook the breakfast sausage until browned and cooked through. Drain excess grease if necessary. Set aside.

3. Prepare the Biscuit Base:

  • Cut the refrigerated biscuits into quarters. Spread them evenly in a greased 9×13 inch baking dish.

4. Whisk the Eggs:

  • In a mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder. Stir in the cooked sausage and shredded cheese.

5. Assemble the Casserole:

  • Pour the egg and sausage mixture over the biscuit pieces in the baking dish. Press down slightly to ensure the biscuits are covered.

6. Bake:

  • Bake in the preheated oven for 25-30 minutes, or until the egg is set and the top is golden brown.

7. Make the Gravy:

  • While the casserole is baking, make the gravy. In a skillet over medium heat, add the cooked sausage (if you have leftovers) and the flour. Stir to combine, cooking for about 1-2 minutes.
  • Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with sausage seasoning, salt, and pepper.

8. Serve:

  • Once the casserole is done, let it cool for a few minutes. Serve warm with sausage gravy poured over the top.

Tips:

  • Add Vegetables: Feel free to add diced bell peppers or spinach to the egg mixture for extra nutrition.
  • Make Ahead: You can prepare the casserole the night before and refrigerate it, then bake it in the morning.
