Here’s a delicious Blueberry Cheesecake Cookies recipe that combines the rich flavor of cheesecake with the sweetness of blueberries in a soft, chewy cookie!

Ingredients:

For the Cookie Dough:

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup blueberries (fresh or frozen)

For the Cheesecake Swirl:

  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Make the cookie dough:
    • In a bowl, whisk together the flour, baking soda, and salt. Set aside.
    • In a separate large mixing bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
    • Add the egg, vanilla extract, cream cheese, and sour cream to the sugar mixture. Mix well until everything is combined.
    • Gradually add the dry ingredients to the wet ingredients, stirring until the dough comes together.
    • Gently fold in the blueberries. If using frozen blueberries, do not thaw them beforehand to prevent the dough from turning blue.
  3. Make the cheesecake swirl:
    • In a small bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. Assemble the cookies:
    • Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
    • Drop a small spoonful of the cheesecake mixture onto each cookie dough mound. Use a toothpick or knife to swirl the cheesecake mixture into the cookie dough, making a marbled effect.
  5. Bake:
    • Bake for 10-12 minutes, or until the edges of the cookies are lightly golden, but the centers are still soft.
    • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
  6. Enjoy:
    • Once cooled, the cookies will be soft, chewy, and bursting with blueberry flavor, with a rich, creamy cheesecake swirl.
