Blueberry Cheesecake Swirl Cookies

Deliciously soft cookies with a creamy cheesecake swirl and fruity blueberry jam—perfect for dessert or a sweet snack!

Ingredients:

Dry Ingredients:

  • 2½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ¼ tsp salt

Wet Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup granulated sugar

  • ½ cup light brown sugar, packed

  • 1 large egg + 1 egg yolk

  • 2 tsp vanilla extract

Cheesecake Swirl:

  • 4 oz cream cheese, softened

  • ¼ cup powdered sugar

  • ½ tsp vanilla extract

Blueberry Swirl:

  • ½ cup blueberry jam or preserves (or homemade compote)

  • 1 tsp lemon juice (optional, for brightness)

Optional Topping:

  • Coarse sugar or powdered sugar for dusting


Instructions:

1. Prep Dough:

  • Whisk together dry ingredients (flour, baking soda, baking powder, salt).

  • In a separate bowl, beat butter, granulated sugar, and brown sugar until fluffy.

  • Add egg, egg yolk, and vanilla, mixing until smooth.

  • Gradually add dry ingredients, mixing just until combined.

  • Chill dough for 30 minutes (to prevent spreading).

2. Make Swirls:

  • Cheesecake Swirl: Beat cream cheese, powdered sugar, and vanilla until smooth.

  • Blueberry Swirl: Warm jam slightly (for easier swirling) and mix with lemon juice if using.

3. Assemble Cookies:

  • Roll dough into 1.5-inch balls and flatten slightly.

  • Use a spoon to make a small well in each, then fill with:

    • A dollop of cheesecake mixture

    • A drizzle of blueberry jam

  • Gently swirl with a toothpick (don’t overmix).

4. Bake & Cool:

  • Preheat oven to 350°F (175°C).

  • Bake for 10–12 minutes until edges are golden (centers will be soft).

  • Let cool on the pan for 5 minutes, then transfer to a wire rack.

5. Serve:

  • Dust with powdered sugar or sprinkle with coarse sugar for extra crunch.
