Blueberry Pudding Cake

Ingredients:

  • 2 cups fresh or frozen blueberries
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)
  • Powdered sugar, for dusting (optional)

Instructions:

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C).
  • Grease a 9-inch round or square baking dish with butter or non-stick spray.

2. Prepare the blueberries:

  • In a medium bowl, combine the blueberries, 1/2 cup of sugar, lemon juice, and lemon zest. Toss to coat evenly, then set aside.

3. Make the batter:

  • In another bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, salt, and optional cinnamon.
  • Add the milk, melted butter, and vanilla extract to the dry ingredients. Stir until combined, but don’t overmix. The batter should be thick.

4. Assemble the cake:

  • Pour the batter into the prepared baking dish. Don’t worry if it seems a bit thick—it will spread out as it bakes.
  • Spoon the blueberry mixture evenly on top of the batter. Don’t stir it in—the blueberries will sink during baking, creating the “pudding” effect.

5. Bake:

  • Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the center is set. The cake will be puffed on top with a pudding-like sauce at the bottom.

6. Serve:

  • Let the cake cool slightly before serving. Dust with powdered sugar, if desired, and serve warm with a scoop of vanilla ice cream or whipped cream for an extra indulgent treat!
