Bobby Flay’s Salisbury Steak with Mushroom Gravy

This Salisbury Steak recipe, inspired by Bobby Flay, features juicy, flavorful beef patties smothered in a rich, umami-packed mushroom gravy. A comforting, restaurant-quality dish that’s perfect for a hearty weeknight dinner!

Ingredients

For the Patties:

  • 1 ½ lbs ground beef (80/20 blend for best flavor)

  • ½ cup panko breadcrumbs (or almond flour for keto)

  • 1 large egg, lightly beaten

  • 2 tbsp Worcestershire sauce

  • 1 tbsp Dijon mustard

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika

  • Salt & black pepper, to taste

  • 2 tbsp olive oil (for searing)

For the Mushroom Gravy:

  • 2 tbsp unsalted butter

  • 1 small onion, finely diced

  • 8 oz cremini mushrooms, sliced

  • 2 cloves garlic, minced

  • 2 tbsp all-purpose flour (or 1 tbsp cornstarch for gluten-free)

  • 2 cups beef broth

  • 1 tbsp tomato paste

  • 1 tbsp Worcestershire sauce

  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)

  • Salt & black pepper, to taste

Instructions

1. Make the Patties:

  • In a large bowl, combine ground beef, breadcrumbs, egg, Worcestershire, Dijon, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently (don’t overwork).

  • Shape into 4-6 oval patties (about ½-inch thick).

2. Sear the Patties:

  • Heat olive oil in a large skillet over medium-high heat.

  • Cook patties for 3-4 minutes per side until browned (they’ll finish cooking in the gravy). Remove and set aside.

3. Make the Gravy:

  • In the same skillet, melt butter over medium heat.

  • Add onion and mushrooms, sautéing until softened (5-6 mins).

  • Stir in garlic, cook for 30 seconds.

  • Sprinkle flour, stirring for 1 minute to cook off raw taste.

  • Slowly whisk in beef broth, tomato paste, Worcestershire, and thyme. Bring to a simmer.

  • Season with salt & pepper to taste.

4. Finish Cooking:

  • Return patties to the skillet, spooning gravy over them.

  • Simmer on low heat for 10-12 minutes, until patties are cooked through.

Serving Suggestions

  • Serve over mashed potatoes, buttered noodles, or cauliflower mash.

  • Garnish with fresh parsley for a pop of color.
