Bobby Flay’s Salisbury Steak with Mushroom Gravy

Ingredients
For the Patties:

For the Mushroom Gravy:

2 tbsp unsalted butter

1 small onion, finely diced

8 oz cremini mushrooms, sliced

2 cloves garlic, minced

2 tbsp all-purpose flour (or 1 tbsp cornstarch for gluten-free)

2 cups beef broth

1 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

Salt & black pepper, to taste
Instructions
1. Make the Patties:

In a large bowl, combine ground beef, breadcrumbs, egg, Worcestershire, Dijon, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently (don’t overwork).

Shape into 4-6 oval patties (about ½-inch thick).
2. Sear the Patties:

Heat olive oil in a large skillet over medium-high heat.

Cook patties for 3-4 minutes per side until browned (they’ll finish cooking in the gravy). Remove and set aside.
3. Make the Gravy:

In the same skillet, melt butter over medium heat.

Add onion and mushrooms, sautéing until softened (5-6 mins).

Stir in garlic, cook for 30 seconds.

Sprinkle flour, stirring for 1 minute to cook off raw taste.
