Sweet Sugar Pork Chops Recipe

Ingredients:

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • 2 tbsp olive oil or vegetable oil
  • 1/4 cup brown sugar (packed)
  • 2 tbsp Dijon mustard or whole-grain mustard
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp ground cinnamon (optional, for extra warmth)
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt
  • 1/2 tsp smoked paprika (optional, for extra depth)
  • 1 tbsp butter (for finishing)

Instructions:

1. Prepare the Pork Chops:

  • Pat the pork chops dry with paper towels to remove excess moisture. This will help them sear better.
  • Season both sides of the pork chops with salt, pepper, garlic powder, and paprika (if using).

2. Cook the Pork Chops:

  • Heat a large skillet (preferably cast-iron) over medium-high heat and add the olive oil.
  • Once the oil is hot, add the pork chops and sear them for 4-5 minutes per side until they are golden brown and cooked through. You can use a meat thermometer to check the internal temperature; it should reach 145°F (63°C). Remove the chops from the skillet and set them aside on a plate.

3. Make the Sugar Glaze:

  • In the same skillet, lower the heat to medium. Add the brown sugar, mustard, soy sauce, cinnamon, and a pinch of salt. Stir everything together to form a smooth glaze.
  • Cook the glaze for 2-3 minutes, stirring frequently, until the sugar is dissolved and the sauce thickens slightly.

4. Finish the Pork Chops:

  • Return the pork chops to the skillet, turning them in the glaze to coat them evenly. Let them cook for another 1-2 minutes, allowing the glaze to caramelize slightly. Add the butter to the pan at the end, stirring it into the glaze for a smooth finish.

5. Serve:

  • Once the pork chops are well-coated with the glaze, transfer them to plates. Spoon any extra glaze from the pan over the top of the chops for added flavor.

6. Optional Garnishes:

  • Garnish with fresh herbs like parsley or thyme if desired, or serve with a side of roasted vegetables, mashed potatoes, or rice.

Tips:

  • Sweeteners: You can experiment with different sweeteners for the glaze. Maple syrup, honey, or agave syrup can also be used in place of brown sugar.
  • Adding Heat: For a little heat, you can add a pinch of red pepper flakes to the glaze. The combination of sweet and spicy adds an extra layer of flavor.
  • Oven-Baked Option: If you prefer to bake the pork chops, sear them in a skillet for 2-3 minutes per side, then transfer them to a 375°F (190°C) oven for 10-12 minutes, or until the internal temperature reaches 145°F. Brush with the glaze halfway through cooking.
