Bread and Butter Strawberry Pie Recipe

Ingredients:

For the Pie:

  • 6 slices bread (white, brioche, or challah work well)
  • 4 tablespoons unsalted butter, softened
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (adjust to taste)
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

For the Custard:

  • 3 large eggs
  • 1 1/2 cups milk (whole or 2%)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)

For Serving (Optional):

  • Whipped cream or vanilla ice cream
  • Fresh mint leaves for garnish

Instructions:

  1. Prepare the bread:
    • Spread each slice of bread with softened butter on one side. Cut the bread into triangles or cubes.
  2. Prepare the strawberries:
    • In a medium bowl, toss the sliced strawberries with 1/4 cup sugar, lemon juice, and vanilla extract. Let them sit for 10-15 minutes to macerate and release their juices.
  3. Assemble the pie:
    • Arrange half of the buttered bread pieces in a greased 9-inch pie dish or baking dish. Layer half of the macerated strawberries (including the juices) over the bread.
    • Repeat with the remaining bread and strawberries.
  4. Make the custard:
    • In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon (if using) until well combined.
    • Pour the custard mixture evenly over the bread and strawberries, pressing down gently to ensure the bread absorbs the custard.
  5. Bake:
    • Preheat your oven to 350°F (175°C). Let the assembled pie sit for 10-15 minutes while the oven heats up.
    • Bake for 35-45 minutes, or until the custard is set and the top is golden brown. If the top browns too quickly, cover it loosely with aluminum foil.
  6. Serve:
    • Let the pie cool for 10-15 minutes before serving. Serve warm or at room temperature, topped with whipped cream or vanilla ice cream if desired. Garnish with fresh mint leaves for a pop of color.

Tips:

  • Use stale bread: Slightly stale bread works best for this recipe, as it absorbs the custard better without becoming too mushy.
  • Add other fruits: Swap strawberries for raspberries, blueberries, or a mix of your favorite berries.
  • Make it ahead: Assemble the pie the night before, cover, and refrigerate. Bake it the next day for a fresh, warm dessert.
