Ingredients (for 1 serving)

  • 2 slices of bread (sourdough, whole wheat, or your favorite)

  • 1–2 large eggs

  • 1–2 slices of cheese (cheddar, American, or pepper jack work well)

  • 1 tbsp butter (divided)

  • Salt & pepper to taste

  • Optional add-ins: cooked bacon, ham, avocado, spinach, or hot sauce

Instructions

  1. Scramble the eggs:

    • Whisk the eggs with a pinch of salt and pepper.

    • Melt ½ tbsp butter in a pan over medium heat, then pour in the eggs.

    • Gently scramble until just set (they’ll finish cooking in the sandwich). Remove and set aside.

  2. Assemble the sandwich:

    • Butter one side of each bread slice with the remaining ½ tbsp butter.

    • Place one slice (butter-side down) in the pan, then add cheese, scrambled eggs, and any extras (like bacon or avocado).

    • Top with the second slice of bread (butter-side up).

  3. Grill to perfection:

    • Cook over medium-low heat for 2–3 minutes per side, pressing lightly with a spatula, until golden brown and the cheese is melted.

  4. Serve & enjoy:

    • Slice in half and enjoy immediately while hot and gooey!

Tips

  • For extra crispiness, use mayo instead of butter on the bread.

  • Want a runny yolk? Swap scrambled eggs for a fried egg.

  • Add a sprinkle of everything bagel seasoning for extra flavor.
