These Brown Butter Dubai Pistachio Chocolate Chip Cookie Bars are a delightful fusion of rich flavors and textures, perfect for any occasion. Here’s how you can make them:

Ingredients:

  • 1 cup salted butter
  • 1 cup brown sugar (light or dark)
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup pistachio butter
  • 1/2 cup toasted kataifi (shredded phyllo dough)
  • 1/2 cup chopped pistachios (optional, for garnish)

Instructions:

  1. Brown the Butter:

    • In a saucepan over medium heat, melt the salted butter, stirring continuously until it turns golden brown and emits a nutty aroma. Remove from heat and let it cool slightly.
  2. Prepare the Cookie Base:

    • Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.
    • In a large bowl, whisk together the browned butter, brown sugar, and granulated sugar until smooth.
    • Beat in the egg and vanilla extract until well combined.
    • In a separate bowl, mix the all-purpose flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
    • Fold in the semi-sweet chocolate chips.
    • Spread the cookie dough evenly into the prepared baking pan.
  3. Add the Pistachio Filling:

    • In a small bowl, combine the pistachio butter and toasted kataifi. Mix until well incorporated.
    • Spread this pistachio mixture evenly over the cookie base.
  4. Bake:

    • Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Remove from the oven and allow it to cool completely in the pan on a wire rack.
  5. Serve:

    • Once cooled, lift the bars out of the pan using the parchment paper overhang.
    • Cut into squares and garnish with chopped pistachios if desired.
    • Serve and enjoy!
