Brown Sugar Caramel Muffins

Ingredients:

For the Muffins:

  • 1 ¾ cups (220g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) packed brown sugar
  • 2 large eggs
  • ½ cup (120ml) buttermilk (or milk + ½ tsp vinegar)
  • 1 tsp vanilla extract
  • ¼ cup (60ml) caramel sauce (store-bought or homemade)

For the Topping:

  • ¼ cup (50g) brown sugar
  • 2 tbsp (30g) butter, melted
  • 1-2 tbsp caramel sauce (for drizzling)

Instructions:

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease well.
  2. Mix dry ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter & sugar: In another bowl, beat softened butter and brown sugar until fluffy.
  4. Add wet ingredients: Beat in eggs one at a time, then mix in buttermilk and vanilla.
  5. Combine: Gradually fold dry ingredients into wet until just combined (don’t overmix).
  6. Add caramel: Swirl in caramel sauce lightly for a marbled effect.
  7. Fill muffin cups: Divide batter evenly (about ¾ full).
  8. Make topping: Mix brown sugar and melted butter, then sprinkle over muffins.
  9. Bake 18-20 mins until a toothpick comes out clean.
  10. Drizzle with caramel while warm.
