Brown Sugar Meatloaf
A sweet and savory twist on classic meatloaf, glazed with a sticky brown sugar-ketchup topping that caramelizes as it bakes. Perfectly moist, flavorful, and a guaranteed family favorite!
Ingredients (Serves 6-8)
For the Meatloaf:
- 1.5 lbs (680g) ground beef (80/20 blend for juiciness)
- 1/2 lb (225g) ground pork (or use all beef)
- 1 cup breadcrumbs (or crushed saltines)
- 1/2 cup whole milk (or buttermilk)
- 1 large egg, beaten
- 1/2 cup finely diced onion
- 2 garlic cloves, minced
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
For the Glaze:
- 1/2 cup ketchup
- 1/4 cup brown sugar, packed
- 1 tbsp apple cider vinegar (or Worcestershire)
- 1/2 tsp garlic powder
Instructions
1️⃣ Prep & Mix
- Preheat oven to 350°F (175°C). Line a loaf pan with parchment or lightly grease.
- In a large bowl, soak breadcrumbs in milk for 5 minutes.
- Add ground beef, pork, egg, onion, garlic, Worcestershire, mustard, paprika, salt, and pepper. Mix gently (don’t overwork).
2️⃣ Shape & Bake
- Press mixture into the loaf pan (or shape free-form on a baking sheet).
- Bake uncovered for 40 minutes.
3️⃣ Glaze & Finish
- Whisk together ketchup, brown sugar, vinegar, and garlic powder.
- After 40 minutes, spread glaze over the meatloaf.
- Bake 15-20 more minutes, until internal temp reaches 160°F (71°C).
- Let rest 10 minutes before slicing.
