Butter Pecan Cake Recipe

Ingredients

  • For the Cake:
    • 1 cup unsalted butter, softened
    • 2 cups granulated sugar
    • 4 large eggs
    • 3 cups all-purpose flour
    • 1 cup buttermilk (or milk with 1 tbsp vinegar added)
    • 1 tsp vanilla extract
    • 1 tsp baking powder
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1 cup pecans, toasted and chopped
  • For the Frosting:
    • 1/2 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 1/4 cup milk (more if needed)
    • 1 tsp vanilla extract
    • 1/2 cup pecans, toasted and chopped (for garnish)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Prepare the Cake Batter:
    • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
    • Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.
    • Stir in the vanilla extract and chopped pecans.
  3. Bake the Cakes:
    • Divide the batter evenly between the prepared cake pans.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cakes cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
  4. Make the Frosting:
    • In a mixing bowl, beat together the softened butter and powdered sugar until combined.
    • Add the milk and vanilla extract, mixing until smooth and creamy. Adjust the consistency with more milk or powdered sugar as needed.
  5. Assemble the Cake:
    • Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of frosting on top.
    • Place the second layer on top and frost the top and sides of the cake.
    • Garnish with additional chopped pecans on top.
  6. Serve:
    • Slice and serve your delicious Butter Pecan Cake!
