🍫 Butterscotch Chewies (Easy, Gooey & Irresistible!)

These old-fashioned butterscotch chewies are soft, chewy, and loaded with rich brown sugar flavor—just like grandma used to make! Perfect for cookie trays, lunchboxes, or a sweet afternoon treat.


⏲️ Prep Time: 10 mins | Bake Time: 10-12 mins | Makes: 24 bars


📝 Ingredients

  • ½ cup (1 stick) unsalted butter, melted

  • 2 cups packed brown sugar (light or dark)

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1½ cups all-purpose flour

  • 2 tsp baking powder

  • ½ tsp salt

  • 1 cup chopped pecans or walnuts (optional)


👩🍳 Instructions

1️⃣ Prep & Mix

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan.

  2. In a bowl, whisk melted butter + brown sugar until smooth.

  3. Beat in eggs + vanilla.

2️⃣ Dry Ingredients

  1. In another bowl, mix flour, baking powder, and salt.

  2. Gradually stir dry mix into the wet ingredients.

  3. Fold in nuts (if using).

3️⃣ Bake & Cool

  1. Spread batter evenly in the pan.

  2. Bake 10-12 mins (center should be slightly soft—don’t overbake!).

  3. Cool 15 mins, then cut into squares.
