Cabbage and Onion Fritters

Ingredients:

  • 2 cups shredded cabbage
  • 1 medium onion, finely chopped
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal (optional for extra crunch)
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder (optional)
  • 2 tablespoons fresh herbs (like parsley or dill, optional)
  • Oil for frying

Instructions:

  1. Prepare the Vegetables: In a large bowl, combine the shredded cabbage and chopped onion. Let it sit for about 10 minutes to release some moisture.
  2. Mix Ingredients: After 10 minutes, add the flour, cornmeal (if using), eggs, baking powder, salt, pepper, and garlic powder. Mix until everything is well combined. If the mixture seems too wet, add a little more flour.
  3. Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat.
  4. Form Fritters: Scoop about 1/4 cup of the mixture and flatten it slightly into a patty. Carefully place it in the hot oil. Repeat with the remaining mixture, being sure not to overcrowd the pan.
  5. Fry: Cook each fritter for about 3-4 minutes on each side, or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
  6. Serve: Enjoy the fritters warm, with your favorite dipping sauce or yogurt on the side.

Tips:

  • Additions: You can add grated carrots or chopped bell peppers for extra flavor and nutrition.
  • Baking Option: For a healthier version, bake them at 400°F (200°C) on a greased baking sheet for about 20-25 minutes, flipping halfway through.
