Cabbage Fat-Burning Soup Recipe

Ingredients:

  • 1 large onion, chopped
  • 2 large carrots, sliced
  • 3 celery stalks, chopped
  • 2 bell peppers (any color), chopped
  • 1 medium head of cabbage, chopped
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 6 cups vegetable broth (low-sodium if preferred)
  • 1-2 cloves garlic, minced
  • 1 tsp dried oregano (optional)
  • 1 tsp dried basil (optional)
  • ½ tsp black pepper
  • Salt to taste (optional)
  • 1 tbsp olive oil (optional, for sautéing)

Instructions:

  1. Sauté Aromatics: In a large pot, heat olive oil (or use broth for oil-free) over medium heat. Add onions, carrots, celery, and garlic. Sauté for 5 minutes until slightly softened.
  2. Add Remaining Veggies: Stir in bell peppers, cabbage, and diced tomatoes (with juice). Cook for another 3-5 minutes.
  3. Pour Broth & Season: Add vegetable broth, oregano, basil, and black pepper. Bring to a boil.
  4. Simmer: Reduce heat to low, cover, and simmer for 20-25 minutes or until all vegetables are tender.
  5. Adjust Seasoning: Taste and add salt if needed (skip if avoiding excess sodium).
  6. Serve Hot: Enjoy as a light meal or side dish.
