  • 3 cups shredded cabbage (about half a medium cabbage)

  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup breadcrumbs (or almond flour for a gluten-free option)
  • ¼ cup grated Parmesan cheese (optional, for extra flavor)
  • 1 teaspoon paprika
  • ½ teaspoon cumin (optional, for a smoky flavor)
  • Salt and pepper to taste
  • 2-3 tablespoons olive oil (for frying)
  • Optional: chopped fresh herbs like parsley or dill

Instructions:

  1. Prepare the cabbage:
    • Place the shredded cabbage in a large bowl and sprinkle with a pinch of salt. Let it sit for 10 minutes to soften slightly, then squeeze out any excess moisture using a clean kitchen towel or paper towels.
  2. Mix the ingredients:
    • In the same bowl, add the chopped onion, minced garlic, egg, breadcrumbs, Parmesan cheese (if using), paprika, cumin, salt, and pepper. Mix everything together until well combined. If the mixture feels too wet, add a bit more breadcrumbs.
  3. Form the patties:
    • Divide the mixture into 6-8 portions and shape them into patties, about ½-inch thick. Press firmly so they hold together.
  4. Cook the patties:
    • Heat olive oil in a large skillet over medium heat. Add the patties in batches, making sure not to overcrowd the pan.
    • Cook for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat if needed to prevent burning.
  5. Serve:
    • Transfer the cooked patties to a plate lined with paper towels to absorb any excess oil.
    • Serve warm with a side of sour cream, yogurt dip, or your favorite sauce. Garnish with fresh herbs if desired.

  • Add-ins: Mix in grated carrots, zucchini, or shredded potatoes for extra flavor and texture.
