Cabbage Soup Recipe

Ingredients:

  • 1 medium head of cabbage, chopped
  • 1 large onion, diced
  • 2-3 carrots, sliced
  • 2-3 celery stalks, chopped
  • 3-4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 6 cups vegetable or chicken broth
  • 1-2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: 1-2 potatoes, diced (for added heartiness)
  • Optional: chopped fresh parsley for garnish

Instructions:

  1. Sauté Vegetables:
    • In a large pot, heat a little olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  2. Add Garlic:
    • Stir in the minced garlic and cook for another minute until fragrant.
  3. Combine Ingredients:
    • Add the chopped cabbage, diced tomatoes (with juices), broth, bay leaves, thyme, and any optional potatoes. Stir to combine.
  4. Simmer:
    • Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the cabbage is tender.
  5. Season:
    • Taste the soup and adjust seasoning with salt and pepper as needed. Remove the bay leaves before serving.
  6. Serve:
    • Ladle the soup into bowls and garnish with fresh parsley if desired. Enjoy hot!

Tips:

  • You can customize this soup by adding other vegetables like bell peppers, zucchini, or green beans.
  • For a protein boost, consider adding cooked beans or shredded chicken.
