Ingredients

1 lb ground beef or spicy sausage (or half-and-half)

1 medium onion, diced

1 green bell pepper, diced

3 cloves garlic, minced

2 cups cabbage, chopped

1 (14.5 oz) can diced tomatoes, undrained

1 cup chicken broth

1 tbsp Cajun seasoning (adjust for heat)

½ tsp dried thyme

½ tsp oregano

Salt & pepper to taste

Instructions

Brown the meat: In a large pot or Dutch oven, cook ground beef/sausage over medium heat until browned. Drain excess fat if needed.

Sauté veggies: Add onion, bell pepper, and garlic. Cook 3–4 mins until soft.

Add cabbage & spices: Stir in cabbage, Cajun seasoning, paprika, thyme, oregano, salt, and pepper. Cook 5 mins until cabbage wilts slightly.

Simmer: Pour in diced tomatoes and chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer 20–25 mins, stirring occasionally, until cabbage is tender.
