Cajun Cabbage Jambalaya 🌶️🥬

A low-carb, one-pot twist on classic jambalaya—packed with spicy sausage, tender cabbage, and Cajun flavor! Perfect for a hearty, keto-friendly meal.


Ingredients

  • 1 lb ground beef or spicy sausage (or half-and-half)

  • 1 medium onion, diced

  • 1 green bell pepper, diced

  • 3 cloves garlic, minced

  • 2 cups cabbage, chopped

  • 1 (14.5 oz) can diced tomatoes, undrained

  • 1 cup chicken broth

  • 1 tbsp Cajun seasoning (adjust for heat)

  • 1 tsp smoked paprika

  • ½ tsp dried thyme

  • ½ tsp oregano

  • Salt & pepper to taste

  • Hot sauce (optional)

  • Green onions (for garnish)


Instructions

  1. Brown the meat: In a large pot or Dutch oven, cook ground beef/sausage over medium heat until browned. Drain excess fat if needed.

  2. Sauté veggies: Add onion, bell pepper, and garlic. Cook 3–4 mins until soft.

  3. Add cabbage & spices: Stir in cabbage, Cajun seasoning, paprika, thyme, oregano, salt, and pepper. Cook 5 mins until cabbage wilts slightly.

  4. Simmer: Pour in diced tomatoes and chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer 20–25 mins, stirring occasionally, until cabbage is tender.

  5. Adjust & serve: Taste for seasoning (add hot sauce if desired). Garnish with green onions.


Tips & Swaps

  • Extra protein? Add shrimp or chicken in the last 5 mins of cooking.

  • Vegetarian? Use plant-based crumbles and veggie broth.

  • Spicier? Double the Cajun seasoning or add andouille sausage.

  • Serve with: Cauliflower rice, crusty bread, or a side of red beans.
