Cajun Pasta

Ingredients

  • 8 oz (225g) shrimp, peeled and deveined
  • 2 large chicken breasts, cut into bite-sized pieces
  • 2 links andouille sausage, sliced into rounds
  • 6 tbsp butter, divided
  • 3 tbsp Cajun seasoning, divided
  • 1 tsp ground thyme
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 12 oz (340g) pasta (penne, fettuccine, or your choice)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta:
    • Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season the proteins:
    • In a bowl, toss the shrimp and chicken pieces with 1 tbsp Cajun seasoning and ground thyme. Set aside.
  3. Cook the sausage and chicken:
    • In a large skillet or Dutch oven, melt 2 tbsp butter over medium heat. Add the sliced andouille sausage and cook until browned. Remove and set aside.
    • In the same skillet, add another 2 tbsp butter and cook the seasoned chicken pieces until browned and cooked through. Remove and set aside.
  4. Cook the shrimp:
    • Add 1 tbsp butter to the skillet and cook the shrimp until pink and opaque (about 2-3 minutes). Remove and set aside.
  5. Sauté the vegetables:
    • In the same skillet, add the remaining 1 tbsp butter. Sauté the diced onion, minced garlic, and sliced bell peppers until softened (about 5 minutes).
  6. Make the sauce:
    • Stir in the remaining 2 tbsp Cajun seasoning. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 3-4 minutes until slightly thickened.
    • Stir in the grated Parmesan cheese until melted and smooth.
  7. Combine everything:
    • Add the cooked pasta, sausage, chicken, and shrimp to the skillet. Toss everything together until well coated in the sauce. Season with salt and black pepper to taste.
  8. Serve:
    • Garnish with chopped fresh parsley and serve hot.

Tips

  • Adjust the heat: Use more or less Cajun seasoning depending on your spice preference.
  • Add veggies: Include mushrooms, spinach, or zucchini for extra nutrition.
  • Make it creamy: Add a splash of cream cheese or mascarpone for an even richer sauce.
