Cajun Sausage and Garlic Butter Pasta

Ingredients:

  • 12 oz pasta (penne or spaghetti)
  • 1 lb Cajun sausage, sliced (you can use smoked sausage or andouille sausage)
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 tsp Cajun seasoning
  • 1/4 tsp smoked paprika
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream (optional, for creamier sauce)
  • Salt and pepper to taste
  • Fresh parsley or Parmesan cheese for garnish (optional)

Instructions:

1. Cook the pasta:

  • Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.
  • Drain and set aside, reserving a little pasta water for the sauce if needed.

2. Cook the sausage:

  • While the pasta cooks, heat a large skillet over medium heat. Add the Cajun sausage slices and cook for 5-7 minutes, or until browned and cooked through. Remove the sausage from the skillet and set aside.

3. Make the garlic butter sauce:

  • In the same skillet, add the butter and allow it to melt. Once melted, add the minced garlic and cook for 1-2 minutes, until fragrant.
  • Sprinkle in the Cajun seasoning and smoked paprika, stirring to combine with the garlic and butter.

4. Add the chicken broth:

  • Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Let the broth simmer for a minute to reduce slightly.

5. Combine pasta and sausage:

  • Add the cooked pasta to the skillet, tossing to coat in the sauce.
  • Return the sausage to the skillet and stir to combine everything evenly.

6. Optional creaminess:

  • If you like a creamy pasta, add the heavy cream at this point and stir until the sauce is creamy and well-combined.

7. Final touches:

  • Taste and adjust seasoning with salt and pepper, if needed.
  • Garnish with fresh parsley or Parmesan cheese for an extra burst of flavor.
