Cajun Shrimp Scampi Recipe

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 3 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Cajun seasoning (adjust to taste)
  • 1/2 teaspoon red pepper flakes (optional, for extra heat)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

1. Cook the Pasta:

  • Cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

2. Sauté the Shrimp:

  • In a large skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil.
  • Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the shrimp, Cajun seasoning, and red pepper flakes (if using). Cook for 2-3 minutes until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

3. Make the Sauce:

  • In the same skillet, add the chicken broth and bring it to a simmer.
  • Stir in the heavy cream and lemon juice. Let it cook for 2-3 minutes, allowing the sauce to thicken slightly.
  • Season with salt and pepper to taste.

4. Combine Everything:

  • Add the cooked pasta and shrimp back into the skillet. Toss everything together to coat the pasta and shrimp in the sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

5. Serve:

  • Remove from heat and stir in the remaining tablespoon of butter. Garnish with chopped parsley and serve with lemon wedges.
