Cannoli Cookies

These Cannoli Cookies bring the delightful flavors of a traditional cannoli into a soft and chewy cookie form. With creamy ricotta, a hint of vanilla, and a touch of sweetness, these cookies are perfect for any occasion!


Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup ricotta cheese
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup mini chocolate chips (optional, for mixing in)
  • 1/4 cup chopped pistachios (optional, for topping)
  • Powdered sugar, for dusting (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

2. Mix Wet Ingredients:

  • In a large bowl, beat together the butter and sugar until light and fluffy. This should take about 2-3 minutes with an electric mixer or a whisk.
  • Add the ricotta cheese, egg, and vanilla extract to the mixture and beat until well combined.

3. Combine Dry Ingredients:

  • In a separate bowl, whisk together the flour, baking powder, and salt until evenly mixed.

4. Mix the Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix, as this can lead to dense cookies.

5. Add Chocolate Chips (Optional):

  • If you’re using mini chocolate chips, fold them into the dough gently with a spatula. You can also fold in chopped pistachios for extra flavor and texture.

6. Scoop the Dough:

  • Using a spoon or a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet. Space the cookies about 2 inches apart to allow for spreading.

7. Bake:

  • Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are lightly golden. The centers may look slightly soft, but they will firm up as they cool.

8. Cool:

  • Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.

9. Optional Toppings:

  • Use Full-Fat Ricotta: For the creamiest, richest flavor, use full-fat ricotta cheese. It gives the cookies that classic cannoli creaminess.
  • Chocolate Chips: If you prefer a more traditional cannoli flavor, you can omit the chocolate chips, but they add a nice touch of sweetness and texture.
  • Storage: Store the cookies in an airtight container at room temperature for up to 5 days. You can also freeze them for up to 3 months.
