Ingredients:

- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 teaspoon baking powder
- 1 teaspoon salt

- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1 cup cold water
- Vegetable oil, for frying

Instructions:
- Prepare the Batter:
- In a large bowl, whisk together the flour, cornmeal, baking powder, salt, paprika, garlic powder, onion powder, and black pepper.
- Gradually add the cold water, whisking until the batter is smooth and lump-free. The batter should be slightly thick, but still pourable. If it’s too thick, add a little more water.
- Heat the Oil:
- In a large, deep skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F (175°C).
- Coat the Fish:
- Pat the fish fillets dry with paper towels.
- Dip each fillet into the batter, making sure it is well coated. Let any excess batter drip off.
- Fry the Fish:
- Carefully place the battered fish fillets into the hot oil, a few at a time to avoid overcrowding.
- Fry for 3-4 minutes per side, or until the fish is golden brown and cooked through. The internal temperature should reach 145°F (63°C).
- Drain and Serve:
- Remove the fish from the oil using a slotted spoon and transfer to a paper towel-lined plate to drain any excess oil.
- Serve the fish hot with lemon wedges and tartar sauce, if desired.
