Caramel Apple Muffins Recipe with Walnuts & Caramel Drizzle

Ingredients:

For the Muffins:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 1 1/2 cups apples, peeled, cored, and diced (about 2 medium apples)
  • 1/2 cup walnuts, chopped

For the Caramel Drizzle:

  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1 tablespoon heavy cream (optional for a smoother drizzle)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).
  • Line a muffin tin with paper liners or grease the cups lightly.

2. Make the Muffin Batter:

  • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a large mixing bowl, cream the softened butter with the granulated sugar and brown sugar until light and fluffy (about 2-3 minutes).
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Mix in the sour cream or yogurt until fully combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Gently fold in the diced apples and chopped walnuts until evenly distributed throughout the batter.

3. Fill the Muffin Tin:

  • Spoon the muffin batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
  • If desired, top each muffin with a few extra walnut pieces for added crunch.

4. Bake the Muffins:

  • Bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs.
  • Remove the muffins from the oven and let them cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

5. Make the Caramel Drizzle:

  • While the muffins are cooling, heat the caramel sauce in a small saucepan over low heat.
