Best Carne Asada Marinade Recipe

(Enough for 2–3 lbs of steak)

Ingredients:

  • ¼ cup olive oil (or avocado oil)

  • ⅓ cup orange juice (freshly squeezed for best flavor)

  • ⅓ cup lime juice (about 3–4 limes)

  • ¼ cup soy sauce (or tamari for gluten-free)

  • 4 cloves garlic, minced

  • 1 tbsp cumin

  • 1 tbsp chili powder

  • 1 tsp smoked paprika

  • 1 tsp oregano (Mexican oregano if available)

  • ½ tsp black pepper

  • ½ bunch fresh cilantro, chopped (optional but recommended)

  • 1 jalapeño, minced (optional, for heat)

Instructions:

  1. Mix all ingredients in a bowl or blender until well combined.

  2. Place steak (flank, skirt, or flap meat) in a resealable bag or shallow dish and pour marinade over it.

  3. Marinate for at least 2 hours, preferably 4–6 hours (or overnight for deeper flavor).

  4. Grill or cook over high heat (3–5 minutes per side for medium-rare). Let rest before slicing against the grain.

  • Don’t over-marinate (more than 12 hours can make the meat mushy due to citrus).

  • Add a splash of beer (like a Mexican lager) for extra depth.
