Cheddar-Crusted Ground Beef and Rice Casserole Recipe

Ingredients:

  • 1 lb (450g) ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup (200g) long-grain rice (uncooked)
  • 2 cups (480ml) beef broth (or chicken broth)
  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken soup)
  • 1 cup (240ml) milk
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1 1/2 cups (180g) shredded cheddar cheese (divided)
  • 1/4 cup (25g) grated Parmesan cheese (optional for extra flavor)
  • 2 tablespoons chopped fresh parsley (optional for garnish)

Instructions:

1. Prepare the Ground Beef:

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until browned and cooked through, breaking it apart as it cooks. Drain any excess fat.
  • Add the chopped onion and minced garlic to the skillet with the beef, and sauté for 3-4 minutes until the onion becomes soft and translucent.

2. Make the Casserole Base:

  • Add the uncooked rice to the beef mixture and stir to combine.
  • Pour in the beef broth, milk, and cream of mushroom soup. Stir in the dried oregano, thyme, salt, and pepper. Bring the mixture to a simmer and let it cook for 3-5 minutes, allowing the flavors to meld together.
  • Taste and adjust seasoning if needed.

3. Assemble the Casserole:

  • Transfer the beef and rice mixture into a greased 9×13-inch casserole dish and spread it out evenly.
  • Sprinkle 1 cup (120g) of shredded cheddar cheese over the top of the casserole. This will create a nice cheesy layer when baked.

4. Bake the Casserole:

  • Cover the casserole with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the rice is tender and the mixture is bubbling.
  • After 25-30 minutes, remove the foil and sprinkle the remaining 1/2 cup (60g) of cheddar cheese and the grated Parmesan (if using) on top of the casserole.
  • Return the casserole to the oven, uncovered, and bake for an additional 10-15 minutes, or until the cheese is melted and golden brown, creating a delicious crust.

5. Serve:

  • Once the casserole is done, remove it from the oven and let it rest for 5-10 minutes before serving.
  • Garnish with chopped fresh parsley for a pop of color and freshness, if desired.
